Fans of sauerkraut rejoice: Danish Ballhead is for you. These big fat cabbages don’t hold back, growing to a commanding size (8-10 inches in diameter) and yielding lots of cabbage leaves for krauting. Danish Ballhead is also a good storage variety; pull the whole plants in the fall and hang upside-down, root intact, in a cool basement room. Plants will keep at least one month–and under good conditions up to three or four. A late-season type that does best with early-summer sowings.
